A Yarra Valley local, Paul was amazed by the quality of fruit produced by our vineyards and decided to join Levantine Hill in 2013.
By then he was already recognised as one of Australia’s leading winemakers, having spent five years as winemaker at Yarra Yering where he steered the iconic label immediately after the passing of Yarra Valley legend, Dr Bailey Carrodus.
Having dabbled in jackarooing and rock 'n' roll, Paul found his true calling in the 1990s during a formative 18-months at a Washington State winery in the United States.
He has since worked a staggering 25 Yarra Valley vintages plus a few others in McLaren Vale, the Hunter Valley, the King Valley and Gascony in Southwest France.
In 2006, he fulfilled a personal dream by working at the legendary Domaine Jean-Louis Chave in France's Rhône Valley.
Levantine Hill's philosophy of pursuing quality without compromise is a perfect fit with Paul's winemaking values and his passion for small batch winemaking.
Paul sets the direction of our wines, highlighting the intricacies and unique characteristics of our two famous vineyards.
Our winemaking style allows each vine parcel to express its own voice from vintage to vintage. Our aim is to produce wines of purity, finesse and longevity, befitting our shared vision to truly produce "exceptional wines, handcrafted without compromise" and elevate Levantine Hill to the pinnacle of Australian wine production.
