Vintage 2025 is off to an exciting and intense start at Levantine Hill, the last few weeks described by our Chief Winemaker Paul Bridgeman as nothing short of 'whirlwind.' The warm, dry weather of early 2025 has paved the way for the earliest start to a season in Levantine Hill's history.

With scarce rain since December, the resulting small bunches of fruit are berries with intense concentration and flavour. To date, the winemaking and vineyard team has picked all of our Pinot Noir, as well as our Chardonnay. Select bunches from our vineyards have been carefully chosen for possible inclusion into our 2025 Optume Chardonnay - our rarest and most premium Chardonnay produced to date.
Our viticultural ethos relies on pickings of tiny parcels of fruit, bit-by-bit, row-by-row, over a number of days or weeks, as opposed to the more efficient approach of harvesting en masse. This ensures our fruit is at the perfect ripeness and sugar level, before we crush its flesh to produce the pristine juice that is destined for bottle. We have commenced our initial picks of Shiraz and Cabernet Sauvignon, with the west-facing fan of Samantha’s Paddock having just recently being hand-picked. Even at this early stage, quality and flavours look very impressive, and we are excited about the weeks and months ahead.
